Honey Wheat Ale

Honey Wheat Ale

Honey Wheat Ale is light ale with honey and refreshing hop flavors, without being bitter.  The malt extracts in this recipe result in a blend of 54% Wheat and 56% Barley.  The original Gravity should about 1.045.  This will vary slightly depending on the amount of fermentable sugar extracted from the grain and the sugar content of the honey used.  No flavor hop addition (10 to 15 min boil) has been included to avoid masking the subtle honey flavors.  Cascade hops were selected for their complementary citrus character.

          Ingredients for 5 gallons:

4 lb. Alexander's Wheat Malt Extract Syrup (60% wheat / 40% barley)
1.4 lb. Plain Light (Pale) Malt Extract Syrup
1 lb. Weyermann Light Munich Malt
(Grain – crushed)
1 lb. Honey
(Brewer’s Choice of Brand & Variety) (Simmer Final 10 minutes)
1 oz. Cascade Hop Pellets @ _____% alpha (record # from hop package)
     -  ¾  oz Cascade for Bittering
(full boil – 40 to 60 minutes)
     -  ¼ oz Cascade for Aroma
(end of simmer – off heat 2 to 5 minutes)
½ tsp. Irish Moss
(aides in settling & clarification, final 10 min of rolling boil)
¾ cup Priming Sugar
(dextrose/corn sugar) for bottling
1 Boil Bag for grain
1 pkg. Ale Yeast (recommended = SafAle S-04)

American Pale Ale

American Pale Ale is a style of Pale Ale that has more hop character and flavor than traditional Pale Ale.  

While not as strong or bitter as most India Pale Ales, this recipe features an aggressive dose of hop character from the distinctly American Cascade hop.

The most popular versions of this style are Sierra Nevada Pale Ale and locally, Union Station Brewery's Golden Spike Ale.

          Ingredients for 5 gallons:

2 cans - 3.3 lb Plain Light Malt Extract Syrup
1 lb Crushed CaraHell Malt
(Light Crystal Malt)
2 oz Cascade Hop Pellets for bittering
(full 1 hour boil)
1 oz Cascade Hop Pellets for flavor
(last 10-15 minutes)
1 oz Cascade Hop Pellets for aroma
(last 0-2 minutes)
3/4 cup Corn Sugar for priming
1 boil bag, for grain
1 pkg ale yeast

English Red Bitters

One of our most popular recipes.  Bitters is a traditional British Pale Ale that is not that common in the United States.

This ale is made using a light malt, but the color is somewhat red, or amber, due to the use of Roasted Barley.  The name "Bitters" is not meant to imply that the beer is bitter.  In fact, this recipe is for a smooth beer, without excessive hop characteristics.

          Ingredients for 5 gallons:

2 cans - 3.3 lb Munton's Plain Light Malt Extract Syrup
1/2 cup Crushed Roasted Barley
2 1/2 oz UK Fuggle Hop Pellets for bittering
(full 1 hour boil)
1/2 oz UK Fuggle Hop Pellets for aroma
(last 0-2 minutes of boil)
3/4 cup Corn Sugar for priming
1 boil bag, for grain
1 pkg ale yeast

Liberty India Pale Ale
(I.P.A.)

India Pale ale is a special style of Pale Ale that has more hop bitterness, flavor and aroma, along with a higher alcohol content than traditional Pale Ale.

This recipe features the outstanding flavor and aroma of Liberty hops.  The aggressive use of Galena hops results in a noticeable bitterness that is tempered by the malty characteristics of German Crystal Malt.

          Ingredients for 5 gallons:    

4 lb Alexander's Pale Malt Extract Syrup
3.3 lb Munton's Plain Light Malt Extract Syrup
1 lb Crushed Weyermann CaraMunich III
(German Crystal Malt)
2 oz Galena Hop Pellets for bittering
(full 1 hour boil)
1/2 oz Liberty Hop Pellets for flavor
(last 10-15 minutes of boil)
1/2 oz Liberty Hop Pellets for aroma
(last 0-2 minutes of boil)
3/4 cup Corn Sugar for priming
1 boil bag, for grain
1 pkg ale yeast

PORTER 8.0

When I think of a stout, I think of the Irish Draught stouts, medium bodied with a noticeable bite from the roasted malts.  When I think of Porter, I think strong, full-bodied and smooth as silk.  The roasted flavors have been blended and aged into the background, making this meal in a glass go down nice and easy.  If you already know you like full-bodied porters, try adding the optional malt kicker and make this, what I call, Porter 9.4.  This recipe is based on the Cask Conditioned Porter I used to brew for Union Station Brewery.  Union Station’s best selling cask beer ever.  You’ll make this one again, I promise.

Ingredients for 5 gallons:

1 can – 4 lb. plain dark malt extract syrup  (preferred = Mountmellick)
1 can – 4 lb. plain light malt extract syrup 
(preferred = Alexander’s)
1 can – 1.4 lb. plain light malt extract syrup  - Optional
1 lb. CaraMunich III Malt –
grain  (crushed)
1 lb. Munich Malt –
grain  (crushed)
½ lb. Chocolate Malt – grain 
(crushed)
2 oz. UK Kent Goldings hop pellets for bittering 
(full 1 hour boil)
1 oz. UK Kent Goldings hop pellets for aroma 
(last 0-2 minutes of boil)
½ tsp. Irish Moss Fining 
(clarifier)
¾ cup Corn Sugar for priming
2 boil bags for grain
1 pack Ale yeast
